Many people know that sturgeon is the royal fish, and black caviar is the most delicious and expensive delicacy. One of the biggest impressions from the Astrakhan region was a visit to a sturgeon farm, where we were told how sturgeon are bred and black caviar is obtained.
The process is very long and labor-intensive.
The sturgeon farm “Astrakhan FISH”, which we visited, is one of the four largest farms in the Astrakhan region, it is located right on the river. The distance from Astrakhan to the farm is about 50 kilometers. We specially drive a car as black as caviar. 
The basis of the farm is a large floating structure, divided into many cages, to be precise, the number of cages is now 180. Several types of fish are grown here - a relatively small but very tasty sterlet, different types sturgeon, hybrid fish bester and huge beluga. 
There are posters hanging around the farm, I will add some color to my story. I liked this one the most. 
The fry are obtained in such pools. By the way, a large share of caviar is not used for sale, but for the development of fish stocks. The farm sells not only caviar, but also fry, which are bought by other farms. 
Previously, to obtain caviar, the belly of the fish was ripped open. Then they came up with the idea of carefully cutting and sewing, but still a lot of fish died. Nowadays, a modern technique is used - obtaining caviar in vivo. When the eggs are already ripe, the fish are given a hormonal injection and they spawn. Then the eggs are separated on such a machine. Caviar is usually obtained in May.
The fry hatch in the tanks and when they grow up they are moved to cages. This happens around October. 
The peculiarity of the farm is that the fish are kept in the river, that is, in natural conditions, and not in pools. Sturgeon feed on crustaceans and other living creatures carried by river water. But, of course, it can’t do without feeding. 
Previously, there were a lot of sturgeon on the Volga and other rivers, but then poachers and economic activities led to the fact that sturgeon became very scarce. Now it is prohibited to catch sturgeon. 
Different cages contain different fish, not only by species, but also by age, sex and other indicators. 
Sturgeon is a beautiful and tasty fish. 
These are belugas. Previously, belugas up to 9 meters in length were caught. 
Just think, fish can live up to 100 years. 
I noticed a scarecrow near the cages. It turns out that the birds become impudent and try to steal the fish, especially if the bottom of the cage is raised. 
Also a very good poster. 
The caviar that goes on sale is packaged in branded jars. The farm will soon launch its own packaging workshop. 
But a sturgeon farm is not only about production. What would a tour be without a tasting? Welcome to the restaurant! 
The standard menu on the excursion includes royal sterlet fish soup. 
And baked sturgeon with baked potatoes. Everything is very, very tasty! 
You can also order dishes from the menu. There is no fresher fish here.
